Basic Cornbread Dressing - cooking recipe

Ingredients
    4 c. finely diced celery
    4 c. boiling water
    1/2 c. minced onion
    3/4 c. butter or margarine
    4 qt. lightly packed day old bread crumbs (include cornbread and biscuit)
    8 tsp. poultry seasoning or sage
    1 tsp. salt
    1 tsp. pepper
Preparation
    Simmer celery in boiling water for 15 to 20 minutes or until tender; drain, reserving 1 cup of liquid.
    Cook onion in butter until tender, but not brown.
