Spinach Crab Soup - cooking recipe

Ingredients
    6 Tbsp. butter
    4 c. fresh spinach, washed and chopped
    6 green onions, chopped
    2 Tbsp. flour
    1 c. whipping cream
    3 c. milk
    1/4 c. white wine
    2 oz. diced pimentos, drained
    1 tsp. salt
    1/2 tsp. pepper
    1/2 c. grated Parmesan cheese
    1 lb. crab meat or imitation crab meat
Preparation
    Melt butter in pan.
    Add spinach and onions.
    Saute, stirring, until vegetables are soft.
    Stir in flour and mix well.
    Slowly add cream and milk, stirring constantly.
    Stir in pimentos, wine, salt and pepper.
    Cover and simmer gently for 20 minutes.
    Stir in cheese and crab meat.
    Cover and simmer gently for 5 minutes. Stir once or twice.
    Serves 6 to 8.
