Sunshine Sandwiches - cooking recipe

Ingredients
    1 (8 oz.) can pineapple slices in juice
    2 boneless, skinless chicken breast halves, flattened
    2 tsp. olive oil
    2 whole wheat rolls or favorite bread
    2 slices Swiss cheese
    Sunshine Sauce (see below)
Preparation
    Drain pineapple; reserve 2 teaspoons juice for Sunshine Sauce. Sprinkle chicken with salt and pepper, if desired.
    Brown in oil 7 minutes; cover while browning.
    Spread rolls with Sunshine Sauce.
    Top each sandwich with chicken, cheese, pineapple, lettuce and red onion, if desired.
    Serves 2.
