Swiss Steak Dinner(Serves 75 To 80) - cooking recipe

Ingredients
    50 lb. potatoes
    4 (No. 10) cans peas
    40 lb. steak
    2 lb. carrots
    4 lb. onions for steak
    8 qt. applesauce
    1 qt. oil
    1 qt. vinegar
    5 lb. sugar
    2 lb. coffee
    12 qt. milk
    2 qt. pickles
    8 heads lettuce
    4 large onions
    3 lb. butter
Preparation
    Swiss steaks are cooked in oil with quart of oil, browning along way to make stock for gravy.
    Boil and mash potatoes.
    Cook carrots and warm peas.
    Prepare lettuce and onions as tossed salad.
