Elsa'S Chile Rellenos - cooking recipe

Ingredients
    1 large can whole Ortega peppers
    1/2 doz. eggs, separated
    2 tsp. flour
    1 c. oil
    1 1/2 to 2 lb. Jack cheese
Preparation
    Cut cheese in 1-inch strips.
    Clean peppers in running water, be careful not to break peppers.
    Put peppers on paper towels and pat dry.
    Put strips of cheese inside peppers and set aside.
    Beat egg whites until fluffy and stiff; add yolks, keep beating.
    Add flour and mix well.
    Have frying pan ready with oil on medium heat.
    Dip peppers in egg mixture until covered.
    Fry until golden brown on all sides.
    Drain on paper towels.
    Serves 6.
