3 Day Sweet Pickles - cooking recipe

Ingredients
    1/2 peck cucumbers (about 1 gal.)
    1 c. salt
    1 qt. vinegar
    alum
    1 tsp. allspice
    1 tsp. celery seed
    1 tsp. mixed spice
    1 qt. vinegar
    6 c. sugar
Preparation
    Put cucumbers whole in a brine of 12 cups water and 1 cup salt for 3 days.
    After 3 days, take out of brine and rinse in cold water.
    Cut cucumbers in 1/2-inch pieces.
    Boil 2 cups water, 1 quart vinegar and alum the size of a walnut.
    Put pickles in and boil 7 to 10 minutes.
    Drain and throw away liquid.
    Next, boil allspice, celery seed, mixed spice, 1 quart vinegar and sugar. Pour over pickles and let stand overnight.
    Drain off liquid and boil again for 20 minutes.
    Pour over pickles that have been put in pint jars and seal.
    Very crisp and tasty.
