Venison Salami - cooking recipe

Ingredients
    5 lb. meat
    1/4 c. canning salt
    2 Tbsp. liquid smoke
    2 Tbsp. garlic powder
    2 Tbsp. brown sugar
    2 Tbsp. chili powder
    2 tsp. crushed red pepper
Preparation
    Mix all ingredients; cover and refrigerate for 2 days.
    Divide meat into 2 equal parts and roll in nylon net or make muslin bags and stuff.
    Bake in slow oven (225\u00b0) for 4 hours, turning occasionally.
    Cool.
    Remove netting.
    Freezes well.
