Homestyle Frittata - cooking recipe

Ingredients
    1 lb. small red potatoes
    4 eggs (or substitute)
    4 egg whites
    1/2 tsp. dried oregano leaves, crushed
    1/2 tsp. salt
    1/8 tsp. ground pepper
    1/2 c. thinly sliced roasted red peppers
    2 Tbsp. grated Romano or Parmesan cheese
    2 Tbsp. chopped fresh parsley
    vegetable cooking spray
    4 slices reduced-fat American cheese, each cut diagonally in half
Preparation
    In medium saucepan, combine potatoes and enough water to cover.
    Over medium-high heat, bring to a boil.
    Boil about 15 minutes or until tender; drain.
    Cool slightly; cut into large cubes and set aside.
