Dove A La Papiot - cooking recipe

Ingredients
    12 doves or quail
    salt and pepper
    3 chopped onions
    onion tops, chopped
    2 chopped bell peppers
    1 1/2 lb. sausage
    12 bacon strips
    cooking sherry
Preparation
    Clean birds and season with salt and pepper.
    Fill cavities with onion, parsley, onion tops and bell peppers.
    Cut sausage in small pieces and add this to the bird's cavities.
    Wrap birds with bacon strips and bake at 375\u00b0 for 60 to 65 minutes, applying sherry sparingly over birds every 15 minutes.
