Banana-Apricot Nut Bread - cooking recipe
Ingredients

2 c. unbleached flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1/2 c. chopped dried apricots
1/4 c. chopped toasted walnuts
1/2 c. skim milk
2 egg whites
1/4 c. low-fat vanilla yogurt
2 ripe bananas
Preparation

Stir together flour, baking powder, soda, salt, sugar, apricots and nuts until thoroughly blended.
In a separate bowl, combine bananas, milk, egg whites and yogurt; stir into dry ingredients just until well blended.
Pour batter into a greased loaf pan. Bake in a preheated 350\u00b0 oven (325\u00b0 for glass pan) for 1 1/4 hours or until bread begins to pull away from sides of pan and toothpick comes out clean.
Let cool in pan for 10 minutes; turn out onto a rack to cool completely.
Makes 1 large loaf.
