Lemon Cheese Filling - cooking recipe

Ingredients
    8 egg yolks
    4 tart Granny apples, grated
    4 lemons, grated (grate the rinds)
    all the juice of 4 lemons
    1/4 c. butter
    4 c. sugar (please use Dixie Crystal only)
    1 pinch salt
Preparation
    Beat egg
    yolks
    until\tlight.\tAdd
    sugar and blend in well. Add
    apples, lemon\tjuice
    and
    grated rind.
    (When you grate the apples, put them in the lemon juice so they will not turn dark.) Cook until thick.
    Add butter and salt.
