Irish Soda Bread - cooking recipe

2 c. flour
1 1/2 tsp. sugar
3/4 tsp. salt
1 tsp. baking soda
1 tsp. caraway seed
3 Tbsp. butter
2/3 to 3/4 c. buttermilk
1/2 c. raisins
milk (for brushing)
Preparation

Heat oven to 375\u00b0.
Combine flour, sugar, salt, baking soda and caraway seed in a large bowl.
Cut butter into flour until mixture resembles coarse meal.
Add up to 3/4 cup buttermilk to make a soft, but not sticky dough.
Add raisins.
Knead dough until smooth, about 1 minute.
Shape into a 5-inch disc and put in a baking pan.
Cut a 1/4-inch deep cross in the top.
Brush top with milk.
Bake until golden, about 35 minutes.
