Leek And Potato Soup - cooking recipe

Ingredients
    1 large bunch leeks, washed, peeled and sliced into rounds
    1 Tbsp. butter
    1 medium onion, peeled and chopped (optional)
    2 to 3 medium potatoes, peeled and diced
    2 qt. chicken stock
    salt and pepper as desired
Preparation
    In a large pot, toss leeks (and onions, if used) in butter until soft.
    Add chicken stock and potatoes.
    Bring to a boil and then simmer for approximately 15 minutes (with lid on).
    Check frequently and if necessary, skim froth off with a spoon.
    Season as desired.
    Add water as necessary.
    Serve with warm, crusty bread.
