Diabetic Cake - cooking recipe

Ingredients
    2 c. water
    2 c. raisins (1 box is just right; Dole is best)
    1 c. unsweetened applesauce (natural, no sugar added)
    2 eggs
    2 Tbsp. liquid sweetener or 4 envelopes Equal (it's best to use 6 pkg. Sweet 'N Low. I use it)
    3/4 c. cooking oil (use whatever you have but if buying, Puritan has less saturated fat than any other oil on the market)
    1 tsp. soda
    2 c. all-purpose flour
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
Preparation
    Cook raisins in water until water is all gone; cool.
    Add applesauce, eggs, sweetener and cooking oil; mix well.
    Blend in baking soda and flour; mix well.
    Place in well greased tube or Bundt pan.
    I use tube pan and put a layer of waxed paper on bottom.
    I took out of pan as soon as it was baked but took a knife and went around circle twice before taking out of pan.
    Bake at 350\u00b0 for approximately 45 minutes.
    Keep baking until toothpick comes out clean.
