Banana Nut Bread - cooking recipe
Ingredients

1/3 c. shortening
2/3 c. sugar
3/4 tsp. grated lemon rind
1 to 2 beaten eggs
1 c. ripe bananas (about 3)
1 3/4 c. flour
2 1/2 tsp. baking powder
1/2 c. broken walnuts
Preparation

Preheat oven to 350\u00b0.
Combine shortening, sugar and lemon rind until creamy.
Beat in eggs and bananas.
Sift together flour and baking powder.
Add sifted ingredients in 3 parts to sugar mixture.
Beat after each addition until smooth.
Fold in 1/2 cup broken walnuts.
Place batter in greased pans.
Bake about 1 hour or until done.
Cool before serving.
Yield: 2 loaves.
