Peach Meringues - cooking recipe

Ingredients
    4 large peaches, peeled, halved and pitted
    9 tsp. currant jelly
    2 Tbsp. brandy or creme de cassis
    2 egg whites
    3 Tbsp. sugar
    1/4 tsp. almond extract
Preparation
    Place peaches in a 9-inch pie plate.
    Fill center of each with 1 teaspoon jelly.
    Sprinkle with brandy.
    Set aside.
    Beat eggs in small bowl to soft peaks.
    Gradually beat in sugar until stiff, but not dry, peaks form.
    Beat in almond extract.
    Spread equal amounts of meringue over each peach, twirling to make a decorative swirl.
    Bake in preheated oven at
    425\u00b0 for 10 minutes, until lightly golden.
    Makes 4 servings.
