Pineapple Butter - cooking recipe
Ingredients

1 (8.5 oz.) can crushed pineapple in syrup
1 Tbsp. brandy
1 c. butter, softened
1/2 c. powdered sugar
Preparation

Drain pineapple, reserving syrup.
Place pineapple in blender and puree.
Set aside.
Place syrup in a small saucepan and bring to a boil.
Boil, uncovered, until reduced to 1 tablespoon. Remove from heat and stir in brandy.
Cool to room temperature. In a large bowl, beat butter until fluffy; gradually add sugar. Fold in pureed mixture.
Serve on any bread.
Makes about 2 cups.
