Banana Bread - cooking recipe

1 3/4 c. sifted all-purpose flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 slightly beaten eggs
1 c. mashed ripe bananas (3 or 4)
Preparation

Sift flour, baking powder and salt.
Beat shortening until creamy and glossy, 2 minutes at medium speed.
Gradually add sugar; beat until light and fluffy after each addition.
Add eggs, beat until thick and pale lemon in color.
Add flour mixture and bananas alternately; blend thoroughly after each addition.
Grease bottom of pan only.
Bake at 350\u00b0 for 60 to 70 minutes.
Let bread cool in pan 20 to 30 minutes.
