Fried Potatoes - cooking recipe

Ingredients
    1/2 c. butter or olive oil
    8 large potatoes, peeled and sliced 1/4-inch thick
    1 large onion, chopped
    1 bell pepper, diced
    salt and pepper to taste
    1/2 c. water
    paprika
    bacon, crumbled (optional)
Preparation
    In a large iron skillet, melt the butter. Add a layer of sliced potatoes, onions and bell pepper. Repeat layers until all vegetables are in the skillet. Add water. Cover and cook over medium heat for 35 minutes. To serve, drain off any liquid or fat; turn out onto a platter and garnish with paprika and bacon, if desired. Yield: 8 servings.
