Vegetable Casserole - cooking recipe

Ingredients
    1 c. long grain rice
    2 Tbsp. butter or margarine
    1/2 c. chopped onion
    1 c. chopped carrots
    2 c. broccoli flowerets
    1 medium bell pepper, chopped
    2 cloves garlic, minced
    1 1/2 c. chicken broth
    1 Tbsp. chopped parsley
    dash of salt and pepper
    1 c. grated Cheddar cheese
Preparation
    In a 2-quart casserole, saute the onions in the butter until soft.
    Add the carrots.
    Cook over medium heat for about 3 minutes.
    Add broccoli, bell pepper, garlic and rice.
    Stir to blend.
    Add the chicken broth.
    Bring to a boil.
    Cover with tight fitting lid.
    Cook over low to medium heat for about 20 minutes or just until rice is done.
    Add parsley and salt and pepper.
