Potato Candy - cooking recipe

Ingredients
    1 medium potato
    powdered sugar
    peanut butter *
Preparation
    Peel the potato and boil until tender.
    Mash the potato; add enough powdered sugar until it is rollable.
    Roll out the potato/sugar mixture to about 1/4-inch thick.
    Spread thin layer of peanut butter on the rolled out mixture.
    Then make a jelly roll. Chill and then cut into about 1/8 to 1/4-inch slices.
    Makes a very flavorful swirled candy.
