Hopping John - cooking recipe
Ingredients

1 pt. cooked black-eyed peas
6 slices bacon
3/4 c. chopped onion
1 clove garlic, minced or 1 tsp. powder
1/2 c. cooked rice
salt and pepper to taste
Preparation

Cook bacon, onion and garlic until bacon is crisp and onion is tender but not brown.
Remove bacon and drain.
Add peas and rice to onion, garlic and bacon drippings.
Cover and reduce heat to simmer; cook 5 minutes.
Add broken bacon bits and serve immediately with cornbread and pickle relish on the side.
