Roast Pork Loin - cooking recipe
Ingredients

1 (4 to 5 lb.) pork loin
1 3/4 c. finely chopped green onions
1/4 c. margarine
1/4 c. dry white wine or white vinegar
3/4 c. soft bread crumbs
1 c. sliced fresh mushrooms
1/2 c. shredded carrots
salt and pepper
soy sauce
Preparation

For stuffing, cook mushrooms and green onions in margarine until tender.
Stir in wine, bring to boil, reduce heat and simmer until liquid evaporates.
Remove from heat and stir in bread crumbs and carrots, salt and pepper to taste.
Rub roast with soy sauce. Cut loin in 2 pieces lengthwise (may already be cut).
Place one side down, place stuffing on top and cover with other piece of meat.
Tie together 5 or 6 places.
Roast at 325\u00b0 for 2 to 3 hours. Let stand 15 minutes before serving.
Place on platter and remove strings.
Make sauce of drippings to serve with roast.
