Ratatouille - cooking recipe

Ingredients
    2 medium onions, diced
    4 ribs celery, diced
    1 c. fresh mushrooms or 8 oz. can stems and pieces, drained
    2 cloves garlic, diced
    2 small zucchini, sliced 1/2-inch thick (unpeeled)
    3 tomatoes, diced
    1 small eggplant, peeled and diced
    1/4 c. butter
    1 tsp. salt or to taste
    1/4 tsp. pepper
    1/2 tsp. oregano (optional)
Preparation
    Melt the 1/4 cup butter in a large saucepan.
    Add onion, celery, mushrooms and garlic.
    Cook 3 to 4 minutes over medium heat.
    Add zucchini, tomatoes, eggplant, salt and pepper.
    Cover and cook 15 to 20 minutes.
    Serve hot.
