Marinated Mushrooms And Zucchini - cooking recipe

Ingredients
    8 oz. small whole fresh mushrooms (3 c.)
    2 small zucchini or yellow summer squash, bias sliced into 1/2-inch thick slices (2 c.)
    1 small sweet red pepper, cut in square pieces (1/2 c.)
    1/4 c. lemon juice
    2 Tbsp. olive or vegetable oil
    1 Tbsp. sugar
    1/4 tsp. salt
    1/4 tsp. dried tarragon or oregano, crushed
    1/4 tsp. pepper
    1 clove garlic, minced
Preparation
    Place mushrooms,
    zucchini
    and/or yellow summer squash and red pepper in a plastic bag; set in a deep bowl.
