Joan Donahue'S Tortellini Soup - cooking recipe
Ingredients

1 lb. Italian sausage
1 c. chopped onion
2 cloves garlic
5 c. beef broth
1 c. V-8 juice or 1/2 c. red wine and 1/2 c. water
2 c. chopped seeded tomato (16 oz. can)
1 c. carrots, sliced
1/2 tsp. basil
1/2 tsp. oregano
8 oz. tomato sauce
1 1/2 c. sliced zucchini
8 oz. tortellini
3 Tbsp. fresh chopped parsley
1 medium green pepper (1/2-inch pieces)
grated Parmesan cheese
Preparation

Brown sausage; drain and remove from pan.
Saute onions and garlic until tender.
Add broth, V-8 (or wine and water), tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to boil, reduce heat and simmer 30 minutes.
Stir in zucchini, tortellini, parsley and green pepper and simmer, uncovered, for 35 to 40 minutes more.
Serve with grated Parmesan cheese.
