Zucchini Fritters - cooking recipe

Ingredients
    1 1/2 c. plain flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 c. finely chopped zucchini (not necessary to peel)
    1/2 c. shredded cheese
    1/4 c. finely chopped onion
    1 beaten egg
    1 c. milk
    vegetable oil
Preparation
    Combine flour, baking powder and salt in large bowl.
    Stir in zucchini, cheese and onion; set aside.
    Combine egg and milk; add to flour mixture, stirring just until moistened.
    Drop batter into 1-inch hot oil (375\u00b0) by tablespoons.
    Cook only a few at a time, turning once.
    Fry 2 to 3 minutes until golden brown.
    Drain on paper towels.
    Serve hot.
    Makes 2 dozen.
