Eggplant Parmesan - cooking recipe

Ingredients
    1 medium eggplant
    1/4 c. butter or oleo
    1 c. bread crumbs
    1 small onion, chopped
    1 tsp. sage
    2 eggs, beaten
    salt and pepper to taste
    1/4 c. milk
    Parmesan cheese
Preparation
    Peel eggplant and cook (diced) in salted water until tender. Drain and mash.
    Add butter, milk, crumbs, onion, eggs and spices. Mix well.
    Pour into well-oiled baking dish and cover with cheese (takes about 1/4 cup of grated cheese).
    Bake in oven at 400\u00b0 for about 20 minutes or until bubbly and brown.
