Crawfish Etouffee - cooking recipe

Ingredients
    6 Tbsp. butter
    2 c. chopped onions
    2 cloves minced garlic
    2 Tbsp. chopped green peppers
    2 Tbsp. minced parsley
    1/4 c. chopped celery
    2 Tbsp. green onion tops, chopped fine
    1 lb. or 2 1/2 c. crawfish meat
    1/4 tsp. black pepper
    1/4 tsp. cayenne red pepper
Preparation
    Melt butter in heavy pot.
    Saute onions, pepper and celery until onions are clear.
    Add 1/8 cup water and simmer, covered, until vegetables are tender, about 15 minutes.
    Stir occasionally. Add crawfish and other seasonings to blend.
    Serve over hot steamed rice.
    Makes 4 to 5 servings.
