Zucchini Or Summer Squash Casserole - cooking recipe
Ingredients

6 c. squash
1/4 c. chopped onion
1 c. sour cream (Imo)
1 can cream of chicken soup
1 c. shredded carrots
8 oz. pkg. herb stuffing
1/2 c. oleo, melted
Preparation

Cook sliced squash and onion in boiling, salted water for 5 minutes; drain.
Combine soup, sour cream and carrots.
Fold in squash mix.
Combine stuffing and oleo.
Spread half in pan, then spoon all vegetable mixture over this.
Put remaining stuffing on top.
Bake at 350\u00b0 for 25 to 30 minutes, uncovered.
