Sweet Potato Casserole - cooking recipe

4 or 5 large baked sweet potatoes
1/2 c. sugar
1/2 c. brown sugar
1 8 oz. can crushed pineapple
1 c. orange juice
grated rind from 1 orange
1 small orange, sliced thin
1 1/2 Tbsp. cornstarch
Preparation

Peel and slice sweet potatoes in approximately 3/4-inch slices orange juice, grated orange rind, sugar and corn starch, mixed with a bit of cold water, in small pan and bring to a boil, stirring to prevent sticking.
Pour this mixture over the sweet potatoes, dot with slices of butter or margarine and cover with thin orange slices.
Bake at 350\u00b0 for approximately 40 minutes.
