Tangy Lemon Muffins - cooking recipe

Ingredients
    1 c. margarine
    1 c. sugar
    4 eggs, separated
    1/2 tsp. lemon extract
    2 c. flour (plain)
    2 tsp. baking powder
    1 tsp. salt
    1/2 c. lemon juice
    2 tsp. grated lemon peel
Preparation
    Cream margarine and sugar.
    Beat egg yolks and add to creamed mixture.
    Beat until light and fluffy.
    Add lemon extract.
    Sift dry ingredients and add alternately with lemon juice; mix well. Fold in stiffly beaten egg whites and lemon peel.
    Blend thoroughly.
    Fill muffin tins 3/4 full.
    Bake for 20 minutes at 375\u00b0.
