Peanut Butter-Irish Potato Candy - cooking recipe

Ingredients

1 medium potato
2 1/2 boxes confectioners sugar
1 jar peanut butter

Preparation

Boil potato in jacket until tender.
Cool a bit.
Peel and cream.
Add confectioners sugar to make stiff enough to roll on sugar sprinkled board. Roll out and spread with peanut butter. Roll up into long rolls.
Wrap in damp cloth and let sit (about 20 minutes or so).
Cut in thin slices.
