Spinach Walnut Salad - cooking recipe
Ingredients

4 to 8 strips bacon, cooked crisp, saving 1 Tbsp. bacon fat
1/2 c. low-fat cottage cheese
1 Tbsp. distilled white vinegar
1 tsp. sugar
1/4 tsp. salt
1/8 tsp. ground white pepper
1/3 c. coarsely chopped walnuts
1 lb. fresh spinach, cooked
Preparation

In bowl, stir the tablespoon bacon fat, cottage cheese, vinegar, sugar and salt; drain cooked spinach and lightly press against colander to remove moisture. Place spinach in bowl or on plates; top with walnuts, then cottage cheese dressing. Crumble bacon over all.
