Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. cooking oil
    1 1/2 c. sugar
    2 c. peeled, grated zucchini
    1 Tbsp. vanilla
    1 Tbsp. molasses
    1 1/2 c. all-purpose flour
    1 1/2 c. whole-wheat flour
    4 tsp. cinnamon
    1 tsp. salt
    1/4 tsp. baking soda
Preparation
    Heat oven to 350\u00b0. Spray bottoms of 2 (9 x 5-inch) loaf pans with nonstick spray. In a large bowl, whisk together eggs and oil. Add sugar, zucchini, vanilla and molasses; mix well. Combine flours, cinnamon, salt and soda. Stir into egg mixture, mixing only until well blended. Pour into prepared pans. Bake for about 50 minutes or until toothpick inserted in center of loaves comes out clean. Cool for 10 minutes; remove from pans and cool completely. Yield: 2 loaves (16 slices each).
