Benedictine Spread(Cucumber) - cooking recipe

Ingredients
    1 medium size cucumber, peeled and seeded
    1 (8 oz.) cream cheese, softened
    1/2 medium size onion
    dash of salt
    dash of red pepper
    green food coloring
Preparation
    Grind cucumber pulp; place on cheesecloth and squeeze out the juice.
    Combine pulp with cream cheese, onion and seasonings, mixing thoroughly.
    Add a very small amount food coloring.
    Use for sandwiches or canapes.
