Yeast Raised Waffles - cooking recipe

Ingredients
    1/2 c. very warm water
    1 (1/4 oz.) pkg. dry yeast
    2 c. very warm milk
    1/2 c. (1 stick) butter, melted
    1 tsp. salt
    1 tsp. sugar
    2 c. all-purpose flour
    2 eggs
    1/2 tsp. baking soda
    1 c. small curd cottage cheese
    1 c. grated peeled cooking apple (1 large)
    1/2 c. unbleached flour
    1/4 c. wheat flour
    1 Tbsp. honey
    1 tsp. lemon juice
    1/2 tsp. salt
    1/2 tsp. cinnamon
    4 eggs, separated (at room temperature)
    1/8 tsp. cream of tartar
    melted unsalted butter
    powdered sugar
Preparation
    Combine first 8 ingredients in bowl and blend in egg yolks. Beat whites and cream of tartar in another bowl until stiff, but not dry.
    Fold 1/4 whites into batter.
    Fold in remaining whites.
