Sweet Potato Surprise - cooking recipe
Ingredients

1 c. vegetable oil
2 c. sugar
4 eggs, separated
1/4 c. hot water
2 1/2 c. sifted cake flour
1 Tbsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 1/2 c. grated, uncooked sweet potatoes
1 c. chopped pecans or walnuts
1 tsp. vanilla extract
Preparation

Combine dry ingredients and add to oil mixture; mix just until moistened.
Combine oil, sugar, egg yolks and water.
Beat with electric mixer at medium speed, just until combined.
Stir in sweet potatoes, pecans and vanilla. Beat egg whites until stiff, but not dry.
Fold into cake pans and bake at 350\u00b0.
