Blueberry Or Cranberry Muffins - cooking recipe
Ingredients

2 c. sifted, unbleached flour
1/2 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 well beaten egg
1 c. milk
1/3 c. salad oil
1 c. blueberries or cranberries, fresh or thawed and well drained
Preparation

Sift dry ingredients into bowl.
Make a well into the center. Combine egg, milk and oil.
Add all at once to dry ingredients. Stir quickly, just until dry ingredients are blended.
Gently stir in blueberries or cranberries.
Fill greased muffin pan 2/3 full. Bake at 400\u00b0 for about 25 minutes.
Makes 12 muffins.
