Bacon-Corn Cakes - cooking recipe
Ingredients

6 slices bacon
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. sugar
1 c. milk
1 Tbsp. vinegar
2 eggs
1 Tbsp. bacon grease
1 (12 oz.) can corn
oil (for frying)
Preparation

Cook bacon in a frying pan until crisp.
Drain and crumble. Reserve 1 tablespoon fat and discard remainder.
Combine flour, baking soda, salt and sugar.
Stir in milk that has been mixed with vinegar.
Beat eggs and bacon grease lightly and add to the batter.
Fold in corn and reserved crumbled bacon.
Drop batter from a spoon onto a hot griddle, browning on both sides.
Keep warm until all are cooked.
Serves 8.
