Champagne Poached Peaches - cooking recipe
Ingredients

2 c. champagne or good dry wine
2 Tbsp. framboise (raspberry liqueur)
6 ripe peaches
2/3 c. sugar
1/2 c. heavy cream
1/2 tsp. vanilla
1 tsp. sugar
Preparation

Combine champagne, framboise and 2/3 cup sugar in a large deep kettle and bring to a boil.
Reduce heat to simmer.
Add peaches and poach for 5 to 10 minutes.
Remove from heat and let peaches cool in the liquid, drain.
Whip the cream with the sugar and vanilla.
Spoon over peaches and serve.
