Sweet Potato Salad - cooking recipe

Ingredients
    3 Tbsp. vegetable oil
    2 Tbsp. lemon juice
    1/2 tsp. curry powder
    1/4 tsp. salt
    1/4 tsp. ground coriander
    1/8 tsp. ginger
    dash of pepper
    2 c. diced, cooked, peeled sweet potatoes
    2 c. diced celery
    1 c. cooked peas
Preparation
    In a large bowl, stir together first 7 ingredients.
    Add sweet potatoes, celery and peas.
    Toss to coat with dressing.
    Cover and refrigerate at least 2 hours or overnight.
    Bring to room temperature before serving.
    Serves 6.
