Carrot-Coconut-Cherry Bread - cooking recipe
Ingredients

2 1/2 c. all-purpose flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 eggs, beaten
1/2 c. oil
1/2 c. milk
2 c. shredded carrots
1 1/3 c. flaked coconut
1/2 c. chopped maraschino cherries
1/2 c. raisins
1/2 c. chopped pecans
Preparation

Sift dry ingredients together.
Combine eggs, oil and milk. Add to flour mixture.
Add last 5 ingredients.
Turn into four well-greased and floured 16 ounce fruit or vegetable cans, from which top lid has been removed.
(Or you can use any small type loaf pan.)
Bake in 350\u00b0 oven for 45 to 50 minutes.
Cool on rack. Wrap in foil and store in refrigerator.
Makes 4 loaves.
