Tuna And Rice Croquettes - cooking recipe

Ingredients
    1 c. cooked brown rice
    1 (6 1/2 oz.) can tuna
    1 egg, separated
    2 Tbsp. minced onion
    1 tsp. lemon juice
    1/2 tsp. salt
    1/8 tsp. pepper, ground
    3/4 c. whole wheat bread crumbs
    tomato slices or cheese slices
Preparation
    Combine slightly beaten egg yolk with flaked tuna.
    Add rice and seasonings; chill.
    Fold in beaten egg white.
    Shape into 10 patties.
    Roll in bread crumbs.
    Bake at 350\u00b0 for 30 minutes. Serve hot with tomato or cheese slice.
    Serves 10.
