Olive Jean'S Coahoma Marinated Carrots - cooking recipe
Ingredients

2 lb. fresh baby carrots, cooked whole or 4 (1 lb.) cans whole baby carrots, drained
1 1/2 c. vinegar
1 c. sugar
1/4 c. salad oil
3 green onions, chopped
1/2 green pepper, chopped
1 jar pimento, drained and chopped
Preparation

Mix vinegar, sugar and salad oil.
Bring to a boil.
Remove from heat and cool.
Place carrots in shallow dish.
Sprinkle with chopped vegetables.
Pour cooled vinegar mixture over all. Refrigerate several hours before serving.
These will keep for weeks in the refrigerator.
