Rice Con Queso(From "Diet For A Small Planet") - cooking recipe
Ingredients

3 c. cooked brown rice
2 or 3 c. cooked beans (we use black beans, but pinto, black-eyed peas, etc. can be used)
3 minced or pressed garlic cloves
1/2 large onion, chopped
1 small can green chilies
3/4 lb. Ricotta cheese, thinned slightly with milk or yogurt
3/4 lb. Monterey Jack cheese, shredded
1/2 c. grated Cheddar cheese
Preparation

Combine rice, beans, garlic, onion and chilies.
In a casserole, repeat layers of rice, bean mix, Ricotta cheese and Monterey Jack cheese, ending with rice and beans.
Bake in 350\u00b0 oven for 30 minutes.
Sprinkle grated Cheddar cheese over the top.
