Cashew Chicken - cooking recipe

Ingredients
    10 oz. cooked, cubed chicken
    2 1/2 tsp. soy sauce
    1/2 c. chopped onion
    1/4 c. mushrooms
    3 oz. sliced water chestnuts (reserve 1/4 c. liquid)
    1 1/2 tsp. cornstarch
    1 Tbsp. oil
    1 oz. cashews
    1/2 small clove garlic, minced
    1 Tbsp. sliced green onion
Preparation
    Sprinkle cornstarch over chicken; add soy sauce and let marinate for 15 minutes.
    Heat 1 1/2 teaspoons oil; brown chicken and remove from skillet.
    In same skillet, heat remaining oil; add onion and cashews and stir-fry until onion is tender.
    Add mushrooms and garlic; stir-fry for 1 minute.
    Return chicken to skillet; add water chestnuts and reserved liquid.
    Cover and cook until heated through, one to two minutes.
    Serve sprinkled with green onion.
