Apple Pudding - cooking recipe

Ingredients
    1 lb. baking apples
    3 eggs, separated
    1/2 c. sugar
    1/4 fine matzo meal
    grated rind and juice of 1 lemon
    1/2 tsp. cinnamon
Preparation
    Pare, core and grate apples.
    Beat egg whites until stiff. Beat egg yolks with sugar.
    Add apples, matzo meal, lemon rind and juice and cinnamon.
    Mix well.
    Fold in egg whites.
    Turn into greased deep ovenproof dish.
    Bake at 375\u00b0 for 1 hour.
