Zucchini Relish - cooking recipe

Ingredients
    10 c. grated zucchini
    4 c. chopped onions
    5 tsp. salt
    2 green peppers
    2 red peppers
    5 c. sugar
    1/2 tsp. pepper
    1/2 tsp. alum
    2 tsp. celery seed
    2 1/2 c. cider vinegar
    1/2 tsp. turmeric
    1 tsp. dry mustard
Preparation
    Pour zucchini, onions, salt and peppers in pan and let stand overnight or 3 to 4 hours.
    Mix together remaining ingredients. Bring this to a boil, then add zucchini, peppers and onions.
    Let simmer 30 minutes.
    Place in sterilized jars at once.
    You may process in hot water bath for 5 minutes.
    Makes 5 pints.
