Zucchini Provolone Bake - cooking recipe

Ingredients
    1 c. coarsely chopped onion
    4 c. thinly sliced zucchini
    2 Tbsp. minced, fresh or 2 tsp. dried basil leaves
    1/4 tsp. pepper and salt
    1 c. shredded Provolone cheese
    1/2 c. part-skim Ricotta cheese
    2 eggs, beaten
Preparation
    Coat a large nonstick skillet with cooking spray.
    Place over medium heat until just hot, not smoking.
    Add onion and zucchini and cook 5 minutes or until zucchini is crisp-tender, stirring often.
    Remove from heat; stir in basil, salt and pepper.
    Add cheeses and eggs; mix well.
    Spoon mixture into a 1-quart baking dish coated with cooking spray.
    Bake at 350\u00b0 for 35 to 40 minutes or until top is browned.
    Makes 4 servings.
